The challenge
Decarbonising Europe's food industry
Europe's food industry urgently needs to decarbonise and move towards resource-efficient, resilient production models. Fermentation processes alone — in breweries, wineries and bakeries — already generate more than 10% of the sector's CO₂ emissions. At the same time, demand for sustainable, clean-label food ingredients is growing fast.
The opportunity
From emission to ingredient
FERM4FOOD turns this challenge into an opportunity. By capturing real industrial CO₂ emissions and converting them, through precision fermentation with genetically engineered microorganisms, into lactic acid, single cell protein and microbial oils, the project demonstrates a circular, climate-neutral pathway to produce food-grade ingredients — validated at demonstration scale (TRL7) in an operating brewery.
